The Caboose has been a Lubbock, Texas restaurant tradition since 1977, when the original Copper Caboose opened near Jones Stadium at Texas Tech University and introduced Lubbock to its very first beef and chicken fajitas. Founded by Bob Jones, Frank Smith and brothers John and Frank Fitzpatrick, Copper Caboose quickly became one of the most popular restaurants in Lubbock, known for its authentic Tex-Mex food, West Texas comfort favorites, mouthwatering burgers and full-service family atmosphere.

From the beginning, the Caboose built its reputation on fresh, made-to-order fajitas, burgers, steaks, and classic American and Mexican dishes served in a fun, relaxed environment. Generations of Texas Tech students, local families, and visitors have made the Caboose their go-to destination for great food, cold drinks, and unforgettable memories.

In 1990, Phil Bradley designed and opened 50th Street Caboose near South Plains Mall, creating one of Lubbock’s most unique restaurant and entertainment destinations, featuring Tex-Mex dining, arcade games, sports viewing, and private party spaces. Over the years, the Caboose has continued to grow while staying true to its roots—serving authentic flavors, supporting the Lubbock community, and providing a place where friends and families come together. 

Today, 50th Street Caboose remains one of the best restaurants in Lubbock for sizzling fajitas, burgers, Tex-Mex, and full-service family fun. Whether you're watching the big game on our giant TV wall, celebrating with friends, or enjoying a meal with family, 50th Street Caboose delivers the same quality, atmosphere, and tradition that started it all in 1977.
