The Caboose Story
“Serving Fun in Lubbock Since 1977”
It all started in 1977, when the Copper Caboose opened near Texas Tech’s Jones Stadium—bringing Lubbock its very first beef and chicken fajitas. Founded by Frank Smith and brothers John & Frank Fitzpatrick, the Caboose quickly became a local favorite, blending West Texas comfort food with authentic Mexican family recipes.
In 1990, the fun grew bigger with the launch of 50th Street Caboose near South Plains Mall, designed by Bob Jordan and Phil Bradley. Imagine 15,000 square feet of Tex-Mex and excitement—75+ arcade games, darts, pool tables, a redemption center, and giant TVs everywhere. Kids love the “Tokens for A’s” program, while adults love the food, drinks, and atmosphere. And, thanks to George Amaya, even more authentic flavors were added to the menu.
By 1998, we unveiled our Million-Dollar Midway with 100 arcade and redemption games, plus upgraded party rooms, perfect for birthdays, office events, and team celebrations. Then, in 2005, the Caboose expanded again adding the 50th Street Caboose Sports Grill with 25 HD TVs, a massive video wall, pool tables, and a second bar. Lubbock now has the ultimate spot for sports, food, and fun- all under one roof.
But we didn’t stop there. In 2009, we hit the road with Caboose Catering, delivering our famous 5-star menus to family gatherings, office lunches, corporate events, and Texas Tech tailgates.
In 2020, with the COVID lockdown, we adapted quickly with to-go meals, alcohol-to-go, and expanded delivery. Thanks to our loyal Lubbock community, we came back stronger than ever reopening our dining room and Midway in 2021.
Today, 48 years young, 50th Street Caboose is still a Lubbock favorite for sizzling fajitas, classic Tex-Mex, juicy steaks, 7-oz burgers, seafood, chicken fried steak, huge salads, and other all-American favorites. We’re still serving up fresh, made-to-order food, ice-cold drinks, and non-stop fun.
